Curry or something.
Hello and welcome to Lenka’s kitchen once again! It’s been a while, I know. But let’s be real, who would want to cook with a thigh-to-heel leg prison? And with that being said, that leg prison actually brought me to exploring and revisiting some of the old gems. The thing is, when you are forced to sit on the sofa with your knee lifted high, you can easily gain a pound or two (or five, shhhh). Even walking past the fridge made me put on weight. I decided to skip carbohydrates, or at least try to minimize them. So no bread, no pasta, no croissant... And the recipe I decided to share with you today is one of the healthier ones. Don’t get me wrong, , there is still a full-fat coconut milk inside. It’s just the combination of ingredients that makes it better for you. So let’s start!
Ingredients (serves two) :
2 chicken breasts
1big sweet potato
1 green bell pepper
1 big onion
2 cloves of garlic
1 spoon of Roman cumin, paprika, coriander, curcuma, pepper and salt
Thyme
Lemon thyme
1 spoon of olive oil
1 can of coconut milk
The preparation is simple. Chop everything up to larger pieces and shove it in a larger pan. Add the spices and herbs, add the olive oil and start the cooker. Wait a bit until you hear a little sizzle, because if I could call this a curry, I would say that Indians love to give their spices a little kick by sautéing them. Stir it up a bit, add the coconut milk and a little water to cover the ingredients. Cover it with a lid and cook on a low heat until the sweet potato is tender. Serve with rice, or if you want to cheat a bit, buy a pre-made pack in Tesco. Since I try to avoid carbohydrates, I decided to go for this bulgur and lentils mix. And voilà.... Your meal is ready!
